How do you calculate net carbs? On a US label, subtract fibre and eligible sugar alcohols from total carbohydrate. On UK/EU labels, fibre is already excluded.

The rules applied

  • US labels: net carbs = total carbs − fibre − counted sugar alcohols.
  • UK/EU/AU labels: carbohydrate already excludes fibre, so only sugar alcohols are subtracted.
  • Erythritol and allulose are subtracted fully; xylitol and sorbitol by half; maltitol not at all, because it raises blood sugar much more than other polyols.

The background to each rule is in net carbs vs total carbs.
