Ingredients

Method

  1. Make four keto tortillas from the eggs and mozzarella (bake 10–12 minutes at 200 °C).
  2. Toss the chicken and peppers with the spices.
  3. Lay a tortilla in a buttered pan over medium heat. Add half the cheddar and chicken, then top with a second tortilla.
  4. Cook 2–3 minutes a side until the cheese melts. Repeat with the rest.
  5. Cut into wedges and serve with sour cream and avocado.

Tip. Leftover roast chicken or the creamy mushroom chicken thighs work here. A flat pan lid makes flipping easier.
