Creamy Mushroom Chicken Thighs
Crispy skin-on chicken thighs in a garlic, mushroom and cream sauce — a one-pan keto dinner with about 4 g net carbs per serving.
Serves 4 · Prep 10 min · Cook 30 min
Ingredients
- 8 skin-on chicken thighs
- 250 g mushrooms, sliced
- 200 ml heavy cream
- 30 g grated parmesan
- 1½ tbsp butter (cooking fat)
- 3 cloves garlic
- 2 handfuls spinach (optional)
- Salt, pepper, dried thyme
Method
- Pat the thighs dry and season well. Fry skin-side down in an oven-safe pan over medium heat for 10 minutes until the skin is crisp.
- Turn, then roast in the pan at 200 °C for 15 minutes until cooked through (75 °C inside). Set aside.
- Pour off all but a spoon of fat, add the butter and fry the mushrooms until golden, then the garlic for 30 seconds.
- Add the cream and parmesan, simmer for 3 minutes, then stir in the spinach until wilted.
- Return the chicken, skin-side up, and spoon the sauce around rather than over the skin.
Tip. Serve with garlic butter cauliflower rice or roasted broccoli.
