Keto Waffles (Cheese Chaffles)
Crisp two-ingredient keto waffles, or "chaffles", made from egg and mozzarella in a waffle iron — about 2 g net carbs for two.
Serves 2 (4 small chaffles, 2 per serving) · Prep 3 min · Cook 8 min
Ingredients
- 2 large eggs
- 100 g grated mozzarella
- 1½ tbsp almond flour (optional, for a breadier texture)
- Pinch of salt; sweet version: cinnamon and a little sweetener; savoury version: garlic powder and chives
Method
- Heat a waffle iron (a mini one makes neater chaffles).
- Whisk the eggs, then stir in the mozzarella and almond flour.
- Spoon a quarter of the mixture into the iron, close and cook 3–4 minutes until golden and crisp.
- Repeat. They crisp further as they cool for a minute.
Tip. Sprinkle a little extra cheese on the iron before the batter for a crunchier outside. Use them as sandwich bread too.
