Ingredients

Method

  1. Microwave the 170 g mozzarella and cream cheese in 30-second bursts, stirring, until fully melted.
  2. Stir in the almond flour, egg and a pinch of salt, then knead into a smooth dough.
  3. Roll out between two sheets of baking paper to a 28 cm round. Prick all over with a fork.
  4. Bake at 220 °C for 10–12 minutes until golden.
  5. Spread with passata, add the toppings and bake 6–8 minutes more.

Tip. Almond flour is high in oxalate. If you bake often, alternate with a flax-based crust.
