Serves 4 · Prep 5 min · Cook 10 min
Ingredients
- 450 g fresh spinach
- 90 g full-fat cream cheese
- 80 ml heavy cream
- 30 g parmesan
- 1 tbsp butter (cooking fat)
- 2 cloves garlic
- Salt, pepper, pinch of nutmeg
Method
- Wilt the spinach in a large pan with a splash of water, then squeeze out as much liquid as possible and chop.
- Melt the butter, fry the garlic for 30 seconds, then add the cream cheese and cream and stir until smooth.
- Stir in the spinach and parmesan and simmer for 2 minutes. Season with nutmeg.
Tip. Spinach is high in oxalate — the calcium in the dairy here binds some of it, but rotate with other greens if you are prone to kidney stones.
