Keto Bread: Store-Bought Labels Decoded and a 90-Second Recipe

Keto bread ranges from genuinely low-carb to ordinary bread with a fibre trick. Here is how to tell the difference.

Updated By the Ketora editorial teamHow we write

Short answer: Some is. Many shop-bought loaves use resistant wheat starch, which some people partly digest. Test with a reading to see how you respond.

What is in store-bought keto bread

Most commercial "keto" or "zero net carb" loaves are made with resistant wheat starch, wheat protein (gluten) and added fibres. On a US label the fibre is subtracted, producing a very low net-carb figure.

The open question is how much of that resistant starch your body digests. Responses vary, which is why some people's ketone readings drop after keto bread and others' do not.

Reading the label

  • Ingredients: wheat, wheat starch or "modified wheat starch" near the top means the bread is not grain-free.
  • Net carbs per slice: compare per slice, not per 100 g — slices vary from 20 g to 40 g.
  • Sweeteners: check for maltitol (see keto sweeteners).
  • Test it yourself: take a ketone or glucose reading before and two hours after two slices.

Is keto bread healthy?

It is a processed convenience food. Occasional use to make keto easier to stick to is reasonable. It is not a reason to rebuild a bread-centred diet with a substitute.

90-second mug bread (one serving)

  • 3 tablespoons almond flour (about 21 g)
  • 1 large egg
  • 1 tablespoon melted butter
  • ½ teaspoon baking powder
  • Pinch of salt

Mix in a wide mug, microwave for about 90 seconds, cool, slice and toast. Using our food data, this is roughly 2 g net carbs, 26 g fat and 10 g protein. Almond flour is high in oxalate, so rotate with a flax version if you bake often.

The same dough idea makes a fathead pizza crust.

Alternatives to bread

  • Lettuce or cabbage wraps
  • Portobello mushroom "buns"
  • Cheese crisps
  • Cloud bread (eggs and cream cheese)
