Keto Sweeteners: Which Ones Fit and How to Use Them
Not every "sugar-free" sweetener is keto-friendly. Two of the common ones raise blood sugar noticeably.
Short answer: Erythritol, allulose, stevia and monk fruit are the most common keto-friendly choices. Avoid maltitol.
Comparison
| Sweetener | Counts toward net carbs? | Best for | Watch out for |
|---|---|---|---|
| Erythritol | Effectively no | Baking, drinks | Cooling aftertaste; digestive upset in large amounts |
| Allulose | Effectively no | Baking, caramel, sauces | Browns faster; mild digestive effects |
| Stevia | No | Drinks, small amounts | Bitter aftertaste; often blended with fillers |
| Monk fruit | No | Drinks, blends | Pure extract is very strong; most products are blended with erythritol |
| Sucralose | No (pure) | Drinks | Powdered versions are often bulked with dextrose or maltodextrin |
| Xylitol | Partly | Gum, some baking | Raises blood sugar a little; toxic to dogs |
| Maltitol | Yes — count most of it | Avoid | Raises blood sugar much more than other polyols; laxative effect |
Check the filler
Many "zero-calorie" packets contain dextrose or maltodextrin to add bulk. A single packet is small, but several a day add up. Liquid stevia and liquid sucralose avoid fillers.
For baking
Erythritol and allulose blends behave most like sugar in volume. Allulose keeps baked goods moist and browns quickly, so lower the oven temperature slightly. Pure stevia or monk fruit extract will not replace sugar's bulk on its own. For comparison, one tablespoon of white sugar is 12.5 g of net carbs. For recipes that use them, see keto desserts.
Research note
Some recent observational research has linked higher blood erythritol levels with cardiovascular events. It does not show cause and effect, and the research is ongoing. If you have heart disease or a high cardiovascular risk, use sweeteners sparingly and talk to your doctor.
Recipes that use them sparingly: keto chocolate mousse and fat bombs.
Should you use sweeteners at all?
They make the transition easier for many people. But regular sweet tastes can keep cravings going. A common approach is to use them in the first months, then gradually reduce.
Frequently asked questions
What is the best sweetener for keto?
Erythritol, allulose, stevia and monk fruit are the most common keto-friendly choices. Avoid maltitol.
Does stevia kick you out of ketosis?
Pure stevia does not affect blood sugar in normal amounts. Check powdered products for dextrose or maltodextrin fillers.
