Keto Cheeseburger Casserole (Hamburger Casserole)
Everything you like about a cheeseburger baked in one dish — beef, cheddar, mustard and pickles, no bun — about 3 g net carbs and 32 g protein per serving.
Serves 5 (one 20 × 30 cm dish) · Prep 10 min · Cook 30 min
Ingredients
- 600 g ground beef (80/20)
- ½ small onion, finely chopped
- 60 g cream cheese
- 2 large eggs
- 60 ml heavy cream
- 150 g grated cheddar
- 1 large tomato, sliced
- 1 tbsp yellow mustard, 1 tsp garlic powder, salt and pepper
- Sliced dill pickles and shredded lettuce to serve (check pickles have no added sugar)
Method
- Heat the oven to 190 °C.
- Brown the beef and onion in a pan, breaking it up. Drain most of the fat, then stir in the cream cheese, mustard and garlic powder until smooth. Season.
- Spread the beef in the dish. Whisk the eggs with the cream and pour over the top.
- Scatter over the cheddar and lay the tomato slices on top.
- Bake 25–30 minutes until set and golden. Rest 5 minutes, then top with pickles and lettuce.
Tip. It reheats well, so make it on Sunday for weekday lunches. Portions keep 4 days in the fridge.
