Eggs poached in a spiced tomato and pepper sauce, finished with crumbled cheese — a one-pan keto breakfast with about 9 g net carbs per serving.
Serves 2 · Prep 5 min · Cook 20 min
Ingredients
- 4 large eggs
- 250 g chopped tomatoes
- 1 red pepper, sliced
- ¼ onion, sliced
- 1½ tbsp olive oil (cooking fat)
- 2 cloves garlic
- 30 g crumbled cheese
- Cumin, smoked paprika, chilli, salt, coriander
Method
- Warm the olive oil in a frying pan and soften the onion and pepper for 6–7 minutes.
- Add garlic and spices for 1 minute, then the tomatoes. Simmer 8 minutes until thickened.
- Make four wells and crack in the eggs. Cover and cook 5–7 minutes until the whites set.
- Scatter with cheese and coriander and serve from the pan.
Tip. Onion and tomato add up — this sits at the higher end for a keto breakfast, so keep the rest of the day lean on carbs.
