Serves 10 (about 450 g, 10 servings) · Prep 10 min · Cook 25 min
Ingredients
- 100 g almonds, roughly chopped
- 80 g pecans, roughly chopped
- 60 g walnuts, roughly chopped
- 50 g pumpkin seeds
- 20 g ground flax seeds
- 1½ tbsp chia seeds
- 40 g butter, melted
- 1 egg, whisked (helps clusters form)
- 2 tsp cinnamon, 1 tsp vanilla, pinch of salt; granulated allulose or erythritol to taste (no net carbs counted)
Method
- Heat the oven to 160 °C and line a tray.
- Mix the nuts, seeds, cinnamon and salt. Stir in the melted butter, vanilla, sweetener and egg until everything is coated.
- Press into a thin, even layer.
- Bake 20–25 minutes, turning the tray halfway, until golden. Leave to cool completely on the tray.
- Break into clusters and store in an airtight jar for up to 2 weeks.
Tip. Weigh a serving once. Granola is easy to over-pour, and nuts add up quickly.
